Let me tell you why this appetizer is bonkers great.

Veggie cups are incredibly easy to make.

Veggie cups are visually stunning.

Veggie cups provide a tremendous show of color on the appetizer table.

Veggie cups are incredibly transportable for your guests when they mingle.

Veggie cup ingredients can be prepared ahead of time.

Veggie cups can easily be assembled by your earliest-arriving guests.

Yep.

Want to know when I realized these were the ultimate appetizers?

When I served them with my friend Amanda at a big church dinner and again for Thanksgiving last year and everyone went crazy over them.  It was a complete surprise!  I honestly think the visual presentation was the knock-out punch.

Besides, isn’t it time for another vegetable platter alternative than those dried-out round trays from the produce aisle?

All you have to do is buy a smattering of vegetables such as carrots, celery, and colorful bell peppers.  Add a dip or salad dressing to the bottom of a glass plastic cup, arrange the veggies and add a breadstick cracker.  Viola. Done.

Easy.
Okay, to be fair,  it is the ultimate crowd- pleaser for those who want something healthy at the snack table.
We all want that, right?
